EJ’s Apple Samoas!

Hello there! My name is EJ, and I’m a member of the lovely Greenhouse! In case you are unfamiliar, the Greenhouse is SLU’s sustainability theme house! One of our main focuses is sustainability with food, specifically, eating seasonally. To support this goal, we all work for 15-ish hours in the Fall at a local farm in exchange for fresh veggies for our weekly dinners (Monday–Thursday, available to any SLU student for $5 each dinner; new dinner sign-ups will go live soon!). Anyway, who am I? I’m a sophomore from Maine studying a Studio Art and French double major. I have 43 tattoos, my favorite color is green (surprise, surprise), and I’m the lead singer of a great new band called The Dooks! I’m gonna be sharing a tasty, simple, no-bake sweet treat with you guys that I made for our Sunday house dinner a few weeks ago.   

APPLE SAMOAS  

Ingredients: (measured with our hearts)  

Apples

Nut butter (we used peanut butter)

Coconut shreds

Maple syrup

Chocolate  

Coconut oil  

    Tools:  

A bowl (or two)  

Silverware or stirring object  

Microwave 

Knife and cutting board   

Directions:  

  1. Cut apples into about ⅓ in. disks (starting from top or bottom so seeds are in the middle of the slices), then scoop out seeds to make a donut shape.  
  1. Mix nut butter, coconut shreds, and maple syrup into a thick cookie dough consistency (too dry? Add more syrup and nut butter. Too wet? More coconut). 
  1. Put chocolate and a spoonful of coconut oil into the microwave for however long it takes to melt most of the way, then stir to combine and finish melting (the coconut oil will help it solidify later on).  
  1. Add the coconut nut butter mixture on top of the apple slices, following the donut shape of the apple  
  1. Drizzle (or dump, we don’t judge) as much chocolate as you’d like on top of your pretty creations . 
  1. Stick ’em in the fridge (or freezer) for a while until the chocolate has solidified and you’re ready to enjoy!
